Introduction to the application and industry overview

In food manufacturing, suspending high-thickening agents such as Xanthan gum into liquid and sauces can be a major processing challenge. Xanthan gum powder tends to clump, float, or form fisheyes when introduced into liquid without sufficient shear and controlled induction. Traditional top-entry mixing systems often struggle to pull low-density powders into the mixing zone, leading to extended recirculation time, ingredient waste, and inconsistent texture. Inline powder mixing technologies with high-shear capability can improve dispersion and significantly reduce blending time.

Customer brief

A well-known hot sauce manufacturer was experiencing persistent production issues while trying to disperse Xanthan gum into its sauce base. The process involved manually pouring Xanthan gum powder into a large mixing tank and blending with a top-entry mixer. Due to the powder’s low density and strong tendency to form clumps, the mixing system struggled to pull material into the blend, prolonging recirculation time and reducing operational efficiency.

It was estimated that approximately 10% of the Xanthan gum powder – roughly $400 worth per week remained in clumps and was wasted, equating to significant annual losses at typical production volumes.

Previously unsuccessful methods

Before implementing the new solution:

  • Xanthan gum was manually poured into the top of a batch tank, leading to floating clumps that failed to enter the mixing zone.
  • The top-entry mixer was unable to reliably pull the low-density powder into suspension, resulting in extended recirculation cycles.
  • Repeated mixing and screening were required to remove undispersed powder.
  • Ingredient waste and long blend times reduced throughput and increased operational cost.

These constraints limited production efficiency, increased ingredient loss, and impacted final product consistency.

Previously unsuccessful methods

Fristam’s solution

Fristam recommended the Powder Mixer, an in-line system combining controlled powder induction with high-shear blending. The system features:

  • A Fristam FZ Liquid Ring Pump to reliably draw dry powders into a flowing liquid stream.
  • An FS Shear Blender with multiple rows of rotor–stator mixing zones that create intense turbulence and ensure complete dispersion on the first pass.
  • A floor-level induction funnel that improves operator ergonomics and reduces dust exposure during powder handling.

By combining suction-based powder introduction with high-shear blending, the Powder Mixer prevents powder from floating above the mixing zone and ensures each particle is wetted and dispersed as soon as it enters the process.

Process set-up

1. Inline integration
The Powder Mixer was positioned in the process line so that sauce and water flowed through the induction zone and into the high-shear blender.

2. Powder induction
Xanthan gum was fed into the Powder Mixer funnel at floor level. The suction pump generated a consistent draw of powder into the liquid stream, preventing floatation and clumping.

3. High-shear dispersion
Product entered the FS Shear Blender where close rotor–stator clearances and high turbulence fully dispersed the powder.

4. Recirculation optimization
With improved dispersion on first pass, recirculation time was minimized and batch quality remained consistent.
