A major U.S. baking goods manufacturer required a blending solution capable of thoroughly mixing cake ingredients while also dispersing controlled air bubbles to produce a lighter-textured finished cake.

Because the production line was intended to operate continuously around the clock, the processor also needed robust, high-quality equipment able to maintain performance without reliability concerns.

Conventional bearing-house mixers were considered for the application but presented several limitations. Achieving the required mixing and aeration capacity would have required three separate units, each representing a significant capital expense.

Fristam’s solution

A Fristam FS Shear Blender in conjunction with an upstream air injection tube. This setup allowed for the controlled introduction of micro-air into the batter. By installing the injection system immediately before the filler, the FS rotor-stator could uniformly disperse the air and homogenize the product just prior to portioning, ensuring a consistent final aeration.

Trial set-up

1. Cake batter flowed continuously toward the filling stage through the existing production line.

2. A controlled air injection tube introduced precise quantities of air into the pipeline upstream of the Fristam FS shear blender.

3. The batter then entered the FS rotor-stator shear zone, where injected air bubbles were uniformly dispersed and stabilized throughout the mixture.

4. The aerated, homogenized batter exited the shear blender and was delivered directly to the filler.

5. The system operated under continuous production conditions, allowing evaluation of texture consistency, bubble distribution and finished cake quality.

6. Ongoing operation confirmed stable aeration performance, reliable mixing and mechanical durability during 24-hour production.
